Arepas - The original recipe from Colombia

This recipe has a very special meaning for me - my big sister brought me this recipe back from her trip around the world. In Colombia, she was allowed to watch the women preparing delicious arepas fresh over the fire and asked for the recipe especially for me. So it's actually an original Colombian recipe that I'd like to share with you😊 Arepas are small dumplings made from pre-cooked corn flour that are often sold on street corners in South America as a snack. They are often filled with cheese, pork and vegetables or baked with cheese and topped with fresh guacamole. I filled the arepas with my delicious dal (see recipes), fresh coriander, onions and guacamole and they were simply amazing! There are no limits to your creativity and you can fill them however you like. Have fun trying them out and disfrute de su comida😊

Ingredients

  • 400g pre-cooked corn flour
  • 1 teaspoon salt
  • 1 tsp sugar
  • 1 teaspoon baking powder
  • approx. 550ml lukewarm water

This is how it's done

  1. In a large bowl, mix together the flour, salt, baking powder and sugar.
  2. In the next step, add 550 ml lukewarm water and work into a smooth dough. Depending on the consistency, add a little more water or flour if necessary. The dough needs enough water, otherwise it will disintegrate immediately.
  3. Shape the dough into golf ball-sized balls and flatten slightly until you have round, approx. 1.5 cm thick patties (8 cm in diameter).
  4. Fry the arepas in two non-stick frying pans with a little olive oil until golden brown on both sides. They need about 3 minutes per side.
  5. Remove and fill to your heart's content - for example with guacamole, delicious dal, fresh vegetables and herbs or hummus
