With this delicious baked oatmeal, you can start the day full of energy. The wholesome ingredients make it pleasantly filling and it provides you with important fiber that keeps your intestines going. This power breakfast is also the perfect alternative to muesli, bread etc. and is easy to prepare. And if you still need a tasty power snack for the afternoon, you can simply cut the oatmeal into bars after baking and take them with you😊 If you don't like apples, you can replace them with another fruit, e.g. pears, berries or bananas. The recipe is simply brilliant because it can be prepared in so many different ways, depending on your tolerance and taste. I hope you enjoy trying it out and en Guete😊

Ingredients

  • 135g gluten-free rolled oats
  • 1 1/2 tbsp chia seeds
  • 120g applesauce, unsweetened
  • 2 tsp cinnamon
  • 1/2 tsp speculaas spice (optional)
  • 1 pinch of salt
  • 1 teaspoon vanilla, ground
  • 1 1/2 tbsp maple syrup or other sweetener
  • 345g oat milk or plant-based drink of your choice
  • 2 apples (approx. 300g)
  • 40g raisins or cranberries
  • 50g pecans or other nuts

Toppings

  • some nut butter, e.g. cashew, almond or peanut butter

This is how it's done

  1. Preheat the oven to 180 degrees fan. Grease the baking dish or line with baking paper.
  2. Wash and quarter the apples, remove the core and cut into bite-sized cubes. Roughly chop the pecan nuts.
  3. Add the apple sauce, chia seeds, rolled oats, cinnamon, salt, speculoos spice, raisins, oat milk, maple syrup and vanilla to the casserole dish and stir well. Fold in half the apple pieces and all the roughly chopped pecan nuts. Spread the remaining apple pieces over the mixture.
  4. Bake the oatmeal in the oven for 20-25 minutes. Take out and leave to cool briefly. If you like, you can add some nut butter on top and serve warm😊
