Chia pudding with plum compote

I would like to share my vegan and gluten-free basic recipe for chia pudding with you here. It is very easy and can also be prepared in large quantities - so you can enjoy a healthy, nutritious and delicious breakfast every day. Chia seeds truly live up to the name superfood, as these little powerhouses provide the body with essential omega-3 fatty acids, have an antioxidant effect, are high in fiber and contain 5 times more calcium than milk. Chia seeds are also an excellent vegan egg substitute and enhance any homemade bread, muesli or smoothie😊

Ingredients

Chia pudding
  • 100g chia seeds
  • 140g natural plant yogurt (e.g. New Roots)
  • 350ml plant drink (e.g. Sproud)
  • 1/4 tsp vanilla powder
Plum compote
  • approx. 21 prunes, soaked overnight in cold water
  • 1 pinch of salt
  • 1 teaspoon cinnamon
Topping
  • fresh blackberries
  • Granola
  • Coconut chips (optional)

This is how it's done

  1. Cover the prunes completely with cold water in a Tupperware with a lid and soak overnight.
  2. Mix the chia seeds, plant-based yoghurt, plant-based drink and vanilla powder very well in a large bowl with a whisk so that no more chia seeds stick to the sides. Stir well again after 15 minutes, cover and leave to soak in the fridge for at least 3 hours (preferably overnight).
  3. Bring the soaked prunes and soaking water to the boil in a small pan, reduce the heat and simmer for 8 minutes. Season to taste with a little salt and cinnamon. Remove the pan from the heat and leave to cool for a few minutes. Then roughly puree with a hand blender. There may still be pieces of plum.
  4. The next step is to serve. Divide the chia pudding between 4 glasses and top with the plum compote, fresh blackberries and granola.
