Today I'm making this incredibly tasty and healthy salad, which will brighten up any dreary winter day with its bright red color! I got the recipe from my dear mom, who personally prepares the world's best beetroot salad for me - classic, simple, juicy and wonderfully spicy😊 The root vegetable is a real miracle tuber and has a lot to offer in terms of health. The beetroot provides vitamins A, C, B and folic acid as well as potassium, calcium, magnesium and large amounts of iron. It strengthens the immune system and has a positive effect on blood sugar and high blood pressure - making it an ideal, healthy vegetable for diabetics. All clear? Ingredients

  • 700g pre-cooked beet
  • 1 large onion
  • 1 garlic clove
  • 1 tbsp grainy Dijon mustard
  • 3 tbsp olive oil, I also used some chili olive oil
  • 2 tbsp balsamic vinegar bianco
  • 1 tsp oregano or other herbs (e.g. thyme)
  • Pepper
  • a little salt
  • 1/4 tsp chili flakes (optional)
  • handful of rocket, washed

This is how it's done

  1. Coarsely grate the pre-cooked beet by hand on a grater or with a universal chopper. Place everything in a large bowl.
  2. Peel and finely chop the onion and garlic clove and add to the beet.
  3. Add the mustard, olive oil, vinegar and herbs and mix well.
  4. Allow the dressing to infuse for at least 15 minutes before serving. This allows the flavor to develop wonderfully.
  5. Serve in bowls and garnish with fresh rocket.
