For my alkaline fasting week, I needed a filling snack for "emergencies". As my usual powerballs and muesli bars are not purely alkaline, I wanted to create a recipe that would be perfect for an alkaline fasting week. These super moist tigernut cinnamon energy balls can be made in just a few minutes and consist of only 3 main ingredients. The sprouted oat flakes are real powerhouses and are packed with valuable vitamins and minerals. Sprouting improves the absorption of zinc, iron, magnesium and calcium in particular. In conventional oat flakes, these minerals are absorbed to a lesser extent due to the phytic acid they contain. Sprouted oat flakes are also very high in protein and fiber and get the intestines going. Either way, these delicious energy balls are the ideal snack for on the go and can be enjoyed with a clear conscience😊

Ingredients

  • 60g sprouted rolled oats*
  • 2 tbsp tigernut butter (Alnatura) or almond butter
  • 5 prunes or dates, pitted & soaked
  • 1-2 tablespoons soaking water
  • 1 teaspoon cinnamon powder
  • 1/4 tsp vanilla, ground or vanilla paste
  • 1 pinch of salt
  • Coconut flakes for rolling (optional)

* I deliberately used sprouted oats from Alnatura for these energy balls, as I created them especially for my alkaline fasting cure. If the energy balls don't have to be alkaline for you, you can also use conventional oat flakes.

This is how it's done

  1. Pour boiling water over the prunes or dates and leave to soak for 15-20 minutes.
  2. In the next step, put all the ingredients, including the soaked prunes and soaking water, into a chopper/cutter and puree the mixture. Depending on your taste, there may still be a few pieces left.
  3. Shape the mixture into five equally sized balls and if you like, you can also roll the balls in coconut flakes. Place the energy balls in the fridge for 1 hour before eating. The energy balls will keep for about a week in the fridge in a sealable tin.

Tip: I always like to prepare a larger quantity and then freeze them. This way, they are always ready to hand and can be kept for at least 3 months.
