Fruity fig chutney: delicious and easy to make yourself

From the very first moment, I was absolutely delighted with this delicious fig chutney, which is super easy and quick to make. Chutneys have their origins in Indian cuisine, where they are served with a wide variety of dishes such as dahl, curry, rice dishes as well as fish and meat. Thanks to its diverse flavors, which range from sweet and sour to spicy, chutney also tastes great with cheese, grilled vegetables and spices up any dessert such as pancakes, rice pudding and porridge. The special thing about chutney is the addition of various spices such as ginger, chili and vinegar. You can season this basic recipe according to your preferences and if you don't like figs, you can simply replace them with another fruit - they all taste good!

Ingredients

  • 3 red onions
  • 300g fresh figs
  • 50g xylitol sugar or cane sugar
  • 1 tbsp apple cider vinegar
  • 1 pinch of curry powder
  • 1 1/2 tsp cinnamon
  • 1/2 teaspoon vanilla bourbon
  • Salt to taste
  • 1/2 tbsp cornflour

This is how it's done

  1. Peel and finely chop the onions. Wash and finely chop the figs.
  2. Sauté the onions and figs in a pan with a little olive oil for approx. 5 minutes. Deglaze with apple cider vinegar and stir in the xylitol sugar.
  3. Simmer over a low heat for approx. 20-25 minutes until everything is soft. Stir occasionally to prevent it from burning.
  4. Then stir the cornflour into 2 tablespoons of water until smooth and carefully stir into the mixture. This will thicken the chutney slightly.
  5. Finally, season to taste with the spices and then pour hot into the prepared preserving jars and seal well. The fig chutney will keep for approx. 1 month, provided it has not been eaten by then😉
