This dish is perfect for hot summer days, as it tastes fresh and heavenly both hot and cold. Cauliflower rice is the perfect alternative for all carbohydrate-conscious people among you. Compared to conventional rice, it is low in carbohydrates, making it ideal for a low-carb diet. This vegetable also contains valuable minerals such as potassium, calcium, phosphorus, magnesium, sodium and iron as well as the rare trace elements zinc, copper, iodine and fluorine. Feel free to spice up this recipe with your favorite vegetables to suit your mood 😊

Ingredients

  • 1 cauliflower or 400 g cauliflower rice (frozen)
  • 1/2 chili pepper
  • 100g brown mushroom
  • 100g eggplant
  • 150g peas (cooked, equivalent to 1 small tin)
  • 150g corn (cooked, equivalent to 1 small tin)
  • 1 spring onion
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1/2 lime
  • 1 bunch of fresh herbs: e.g. parsley and/or coriander
  • Pepper

This is how it's done

  1. Wash the cauliflower, separate the florets and either chop into "rice" using a food processor or chop into small pieces with a knife. If you're in a hurry, use ready-made frozen cauliflower rice (defrosted) and skip straight to point 2.
  2. Peel or wash all other ingredients and cut into small pieces.
  3. Heat a little oil in a pan and fry the garlic and onions until translucent.
  4. Then add the chili pepper and cauliflower rice and fry for approx. 5 minutes.
  5. Add the rest of the vegetables and sauté for a further 5 minutes.
  6. Season with spices and drizzle with the juice of half a lime.
  7. Finally, stir in the fresh chopped herbs.
