Healthy muesli bars - crunchy and full of energy!

As the bars from the supermarket are often far too sweet and I only have a very small selection due to my hazelnut and almond allergy, I definitely needed an alternative. And what could be better than home-baked, energy-rich and crunchy muesli bars that contain lots of healthy nuts and seeds and are made exclusively with natural sugar and no additives! These bars are rich in fiber, healthy fats and high-quality proteins and are the ideal snack on a mountain tour, while hiking or after sports. They can be prepared in just a few minutes and you can customize them to your taste with your favourite nuts, seeds and dried fruit and of course change them at any time. Try them once and you won't want to miss the bars from the supermarket again😊

Ingredients

  • 150g gf. rolled oats
  • 30g sunflower seeds
  • 30g pumpkin seeds
  • 20g ground linseed
  • 20g tigernut flakes or almonds
  • 15g puffed amaranth
  • 80g macadamia, chopped
  • 60g pecan nuts, chopped
  • 8 pcs. Dates, finely chopped
  • 15-20 pcs. Dried apricots, cut into small pieces
  • 60g coconut oil or vegan butter, liquid
  • 20g rice syrup or other sweetener
  • 80g applesauce, unsweetened
  • 1-2 tablespoons cinnamon
  • 1 pinch of salt
  • 1 teaspoon vanilla bourbon, ground
Alternatives
  • chopped hazelnuts and/or almonds

  • Chia seeds

This is how it's done

  1. Preheat the oven to 175 degrees top/bottom heat.
  2. Mix all the dry ingredients together.
  3. Roughly chop the nuts, dried apricots and dates and add to the dry ingredients.
  4. Melt the coconut oil or vegan butter in a small pan. Fold into the dry mixture with the rice syrup and apple sauce and mix well.
  5. Spread the mixture onto a baking tray lined with baking paper (20x20cm) and press down well with a spoon or glass base. It should be compact, otherwise the bars will break at the end when you cut them. If you have a muesli bar tin, you can also use this. Now roast for approx. 18-20 minutes until golden brown.
  6. Remove the tray from the oven and leave to cool completely. After cooling, you can cut them to size. The muesli bars will stay fresh in a storage tin in the fridge for up to 1 month.
