Healthy fats, high-quality protein, digestive fiber and phytochemicals - that's what these delicious flaxseed crackers contain. The flaxseed they contain, an absolute superfood, provides essential omega-3 fatty acids, which have anti-inflammatory and blood pressure-lowering properties and ensure good concentration and brain development. They are also high in fiber, which has a positive effect on digestion and keeps the intestinal flora in balance. These crackers are great to eat as a small snack or serve as an aperitif with various dips😊

Ingredients

  • 100g linseed, crushed
  • 150g pecan nuts, chopped
  • 250ml hot water
  • 1 pinch of salt
  • 1/4 tsp psyllium husk powder

--> Bread spices such as dried thyme can also be added.

This is how it's done

  1. Bring the water to the boil in a small pan, then set aside for 4 minutes.
  2. Finely chop the pecan nuts by hand or using a food chopper and place in a bowl with the crushed linseed and salt.
  3. Pour the boiled water over the mixture, add the psyllium husk powder and mix well. Set aside for 1 hour to allow the mixture to swell.
  4. Preheat the oven to 150 degrees top/bottom heat.
  5. Pour the slightly more compact, swollen mixture onto a baking tray lined with baking paper (20cm x 20cm) and smooth out. To make the linseed crackers crispy, they should be approx. 5mm thin.
  6. Roast the crackers in the oven for 35-40 minutes.
  7. Remove and leave to cool completely (they only become really crispy when the mixture is cold).
  8. In the final step, the crackers can be cut to size or you can simply break them into different sizes by hand😊
  9. The linseed crackers will keep for at least 1 month in a well-sealed storage tin.
