Macadamia oat cookies (gluten-free & vegan)

Today I have a new recipe for you that will keep your acid-base balance in check. These macadamia oat cookies are made with lots of alkaline ingredients such as sprouted oats, macadamia nuts, cranberries and sesame seeds. They are healthy, high in fiber and contain high-quality protein and healthy fats. These juicy cookies are also an ideal snack for on the go and in hot temperatures - no risk of melting😊! Whether on a hike, after sport or as a snack in the pool - they are always a treat😊

Ingredients

  • 70g coconut oil, melted
  • 150g sprouted gf rolled oats (health food store or farmy)
  • 50g gf oat flour
  • 3 tbsp apple sauce, unsweetened - non-vegan version: 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 tsp vanilla bourbon, ground
  • 1 pinch of salt
  • 50g tahini (sesame butter) or other nut butter (e.g. almond butter)
  • 50g cranberries (if possible not additionally sweetened)
  • 50g macadamia nuts, roughly chopped

This is how it's done

  1. Preheat the oven to 180 degrees top/bottom heat.
  2. Roughly mix all the dry ingredients (except the macadamia nuts) in a bowl.
  3. Melt the coconut oil slowly in a small pan.
  4. Add the liquid ingredients (coconut oil, tahini, apple sauce) to the dry ingredients and mix everything well.
  5. Roughly chop the macadamia nuts and fold into the mixture.
  6. Now remove some of the mixture with moistened hands and form golf ball-sized balls. Place the balls with enough space between them on a baking tray lined with baking paper and flatten slightly.
  7. Bake the cookies for 10-15 minutes until golden brown. Leave to cool completely on a wire rack.
