Danish smørrebrød with creamy guacamole (vegan & gluten-free)

When I was in Copenhagen recently, I had the pleasure of eating smørrebrød - simply translated: Danish rye bread topped with lots of salted butter. They were so incredibly delicious that I ate them every day in all variations and best of all - they were also available everywhere gluten-free😊 When I got home, I really wanted to try out a recipe for smørrebrød. So I made this gluten-free smørrebrød with creamy guacamole, vegan feta cheese and roasted walnuts! The sandwiches can be prepared in just a few minutes and are perfect for a healthy yet filling lunch. You are also welcome to create your own smørrebrød - but for an original smørrebrød, you should stick to the rye bread or gluten-free seeded bread and salted butter base😊

Ingredients

  • 2 thin slices of gluten-free pumpkin seed bread or any other wholemeal bread
  • 1 ripe avocado
  • 1 lime
  • 1/2 bunch fresh coriander
  • 1 pinch of chili flakes (optional)
  • 1 pinch of chili salt or sea salt
  • some pepper
  • a handful of roasted walnuts
  • vegan feta cheese - non-vegan version: organic feta cheese
  • salted vegan butter - simply mix a little sea salt into the butter
  • some linseed oil
  • fresh strawberries, halved

This is how it's done

  1. Toast the walnuts without fat in a frying pan and set aside.  
  2. To make the guacamole, cut the avocado in half and place the flesh in a bowl. Mash the flesh with a fork until you have a creamy mixture. Wash the coriander, pat dry, finely chop and fold into the avocado cream. Add the lime juice, mix everything well and season with salt, pepper and chili flakes.
  3. Spread the pumpkin seed bread with vegan salted butter, top with guacamole, sprinkle with feta cheese and garnish with the roasted walnuts. Finally, drizzle some linseed oil on top and if you like, you can scatter a few fresh strawberries over the bread.
